This is a traditional pie made in Kerala & Mangalore.
Cucumber & onion pie! ( traditional sweet "Mandaas/ kalthappa") mom made:)
1 cup raw rice (Soaked for 8 hrs), 1 cup boiled rice (Soaked for 8 hrs), 3 cups grated coconut, whilte jaggery as per taste, 4 cups finely chopped cucumber, I used 2 small cucumber. Now grind all the ingredients into a course paste.
In a pan fry two big thinly sliced onion till its brown, add cashew nuts and raisens. Pour this mixture as a base in a greesed pan and than pour the batter on top, Bake this for 1 hour at 175 degree.
(Traditionally this was made using charcoal oven those days) In coorg my mom used to keep this on a stove cover it with a thick lid and pour hot charcoal on it and cook for almost 2 to 3 hours.
